Update Elasticsearch README with information on how to start a deployment.

Also make some cosmetic changes to the Elasticsearch docs.

Follow up on #17467

poetry lock --no-update still updated a bunch of other versions here 🤔 The integration tests still pass.

@baskaryan Do you know if we need to kick off another release process for the changes to be reflected in https://pypi.org/project/langchain-elasticsearch/?
