In SignerOptions and EncrypterOptions, there are ExtraHeaders fields that allow user-specified header parameters to be added. It would be good to document what happens when ExtraHeaders contains a header parameter name that is otherwise serialized by go-jose. Does it overwrite, error, or get ignored? And what are the header parameters that are serialized by go-jose by default?
